C'est La Vie
This week has been a rather relaxed one, not that my weeks are ever not relaxed. I’ve mostly been working on getting things ready for Miguel’s birthday on Tuesday, things that cannot be mentioned (obvs.). It’s interesting trying to surprise your husband when you spend all but four hours of the day together. But, I am super excited and hope he really loves his birthday stuff. Other than that, I did manage to whip up a delicious meal last night (as well as the other nights, but nothing that was blog-worthy).
Southwestern Corn, Bacon, and Potato Soup
Ingredients:
- 2 medium-sized potatoes, cut into cubes (I used red potatoes)
- 2 cups milk of choice (I used soy)
- 1 tbsp butter
- ½ onion, diced
- 1 red pepper, chopped
- ½ cup celery, diced
- 5 slices of bacon, chopped
- 2 cans of whole corn kernels with juice
Method:
- Cook potatoes until soft and drain.
- Add milk to potatoes and blend with an immersion blender. Do not over blend. It’s ok if there are a few chunks left.
- Sauté onions, pepper, and celery for about 5 minutes in a large pot.
- Add bacon and corn and sauté another 2 minutes.
- Pour in potato mixture and bring to a simmer. DO NOT BOIL. Simmer for 10 minutes.
- Devour and enjoy.
This soup was bangin’. As is everything I post on here. I wouldn’t post it otherwise…
Today, I met my hubby in town for coffee, which was fabulous. While waiting for him, I saw this:
There is a flea market downtown right now, so we had to have a look at that.
Typical, but cool. Then, instead of waiting for the bus, we decided to take a leisurely stroll home starting with the botanical gardens.
